Tacos

2 TB olive oil
1 medium onion, finely chopped
3 TB minced garlic
3 tsp ground cumin
2 pound ground beef
1 tsp ground chipotle pepper
1-½ tsp kosher salt
14 oz beef broth
6 oz tomato paste
  1. Set a dutch oven over medium heat and add olive oil.
  2. Once hot, place onions in pan and sauté until translucent, ~ 4 minutes.
  3. Add the garlic and cumin and sauté another minute.
  4. Add beef to the pan and cook, breaking the pieces up as they cook until the meat is browned, about 8-10 minutes.
  5. Drain beef.
  6. Season with chipotle pepper and salt.
  7. Add beef broth and tomato paste and bring to a simmer.
  8. Cook the meat, stirring occasionally until most of the liquid has evaporated, about 25 minutes.
