1c whole wheat flour
1 tsp cinnamon
1-1/2 tsp baking powder
1/2 tsp baking soda
1 tsp pumpkin pie spice
2 eggs
5 TB butter, softened
1/4 c buttermilk
1 tsp lemon juice
3 ripe bananas
1/2 c sugar
1/4 tsp salt
3/4 c applesauce
1/2 c walnuts, chopped
- Preheat oven to 350. Spray a 9 1/2"x5 1/2" loaf pan or 12 jumbo muffin cups with non-stick spray.
- In a large mixing bowl, sift all-purpose flour, whole-wheat flour, cinnamon, baking powder, baking soda and pumpkin pie spice. Set aside.
- In the bowl of an electric mixer, add eggs, butter, buttermilk, lemon juice, bananas, applesauce, sugar and salt. Mix until smooth.
- Slowly add dry ingredients.
- Fold in nuts.
- Pour batter into pan.
- Bake 45 minutes for large muffins, or 1 hr and 25 minutes for bread.
