1 cup half and half
1/2 stick butter, softened
salt
pepper
- Bake potatoes at 375F until tender, 60-90 minutes (if you just don’t have the time to bake the potatoes for 60-90 minutes, you can cook them in the microwave on high for 9 minutes and then bake them in a 375F oven for 20 minutes)
- Let cool on counter ~ 10 minutes
- Split potatoes in half
- Scoop out potato, leaving a thin shell and add to bowl with remaining ingredients. Mix well.
- Add potato mixture back into shells
- Bake at 375F for ~20 minutes more
- Garnish with chives and serve
