Madelines

4 eggs
2/3 c sugar
1/2 tsp salt
1 tsp lemon extract
1 c sifted all purpose flour
1/2 c butter, melted (1 min in microwave) and cooled (for 10 minutes in refrigerator)
powdered sugar
  1. Preheat oven to 375
  2. Spray madeline pans with non-stick spray
  3. In a mixing bowl, beat eggs, sugar, salt and lemon at high speed for 5 minutes
  4. Fold in flour and butter
  5. Spoon into prepared pans.
  6. Bake 10-12 minutes.
  7. Remove from pans, cool on rack
  8. Dust with powdered sugar
