1/2 c butter, softened
1-1/2 c sugar
2 eggs
1 c mashed ripe bananas (2-3)
1 tsp vanilla extract
2 c flour
2 tsp baking powder
1 tsp baking soda
1/2 c milk
Icing
1/3 c creamy peanut butter
1/3 c milk
1-1/2 tsp vanilla extract
3 c powdered sugar
- In a large bowl, cream the butter and sugar until light and fluffy
- Add eggs one at a time, beating well after each addition
- Beat in bananas and vanilla
- Sift together the flour, baking powder and baking soda
- Add flour mixture alternating with milk, beating well after each addition
- Pour into a greased 9x13" baking pan
- Bake at 350 for 30-35 minutes until toothpick inserted near center comes out clean
- Cool on wire rack
- For frosting, mix peanut butter, milk and vanilla until well blended, then gradually beat in powdered sugar
- Spread over cake
