1/2 c brown sugar
2 eggs, separated, then brought to room temperature
1 tsp vanilla
2 c flour, sifted
1/2 tsp salt
1 1/3 c pecans, chopped
3 TB currant jelly
- Mix butter, sugar, egg yolk and vanilla
- Sift and stir in flour and salt
- Roll into small balls
- Beat egg white lightly
- Roll balls in egg whites, then pecans
- Bake at 350 for 5 minutes. Make a thumb print in the center of each cookie.
- Bake another 8 minutes. Cool.
- Fill with jelly.
